Healthy Chocolate Mousse

Healthy Chocolate Mousse

Ingredients: 

4 ounces dark chocolate (70% cacao or greater)

12 ounces silken tofu 

2 tablespoons maple syrup 


optional toppings: chopped tree nuts (walnuts, hazelnuts, almonds, pecans) or fresh berries. 


Preparation: 

1. In a double boiler or saucepan, melt the chocolate over low heat, stirring periodically to prevent scorching.  When the chocolate has completely melted, add the silken tofu and maple syrup.  Stir to combine. 

2. Transfer the mixture to a food processor and whip until fluffy.  

3. Spoon the mousse into individual ramekins or small serving cups.  Place in fridge to cool and set for at least 30 minutes.  

 Enjoy as is or top with chopped nuts or fresh berries if desired.
