Chia and Berry Breakfast Pudding

Chia and Berry Breakfast Pudding

Serves: 4

Ingredients:

1 ½ cups full-fat coconut milk
1 ½ cups unsweetened almond milk, cashew milk or other nut milk
¾ cup chia seeds
2 teaspoons pure vanilla extract
2 teaspoons ground cinnamon
2 cups fresh berries (frozen also works)

1/4 cup finely chopped raw almonds, walnuts or other nuts you enjoy 

Optional: additional ¾ teaspoon ground cinnamon or nutmeg


Directions: 

  1. Place all the ingredients, except the fresh berries, nuts and cinnamon or nutmeg into a large mixing bowl and stir until everything is incorporated. Pour the mixture into four 10-ounce serving bowls or ramekins. Cover and refrigerate overnight to allow the pudding to set and become creamy.
  2. To serve in the morning, top each bowl with 1/4-1/2  cup of the berries and top with 1 tablespoon of the chopped walnuts or almonds and the additional nutmeg or cinnamon if you like. 
*This Recipe is for 4 servings.  If you just want a quick breakfast for just a couple of days, it works great to make half the recipe and divide it between two mason jars with lids. You can adjust the amount of nut milk and chia seeds based on how thick you like your pudding.
