Strawberry Spinach Salad


Prep Notes

Strawberry Spinach Salad 


Ingredients: 

fresh raw spinach (save time with the pre chopped or ready to eat baby spinach)

strawberries, sliced

mozzarella cheese 

chopped walnuts or any other nuts you enjoy 

extra virgin olive oil 


Put it all together: 

Just throw a bunch of spinach in a bowl, toss with some sliced strawberries and shredded mozzarella and walnuts. Mix together and done.  Drizzle a bit of olive oil on top and mix well together. If you plan to store the salad in the fridge for the following day, it is best to drizzle the olive oil on individual bowls of salad to stay freshest. 

Notes

An oldie but goodie for a refreshing healthy salad in berry season! I make this a lot in the summer months.  You can use different cheese as well ( feta or crumbled goat cheese are also tasty).  ~Mandy
