Skillet Sweet Potato Hash

Ingredients:
2 tablespoons unrefined extra virgin coconut oil
2-3 sweet potatoes
4 cups baby kale (can also use spinach)
3 eggs
1 teaspoon minced garlic
1/2 teaspoon crushed red pepper
salt/pepper
Instructions:
1. Peel and chop the sweet potatoes into small squares. Keep them all roughly the same size so they cook evenly.
2. Melt the coconut oil in a large skillet and add the garlic.
3. Cook the sweet potatoes in the oil and garlic on medium heat until they are about 90% done. Stir periodically.
4. Add in the baby kale and cook until soft. Stir.
5. Remove the sweet potatoes and kale from the skillet (temporarily).
6. Crack the 3 eggs over the skillet, allowing the egg whites to fully cook.
7. Add the sweet potatoes and kale mix back to the skillet. Top with salt/pepper and crushed red pepper.
8. Serve hot and enjoy!
