Simple Creamy Pumpkin Soup

Simple Creamy Pumpkin Soup 


1 15 ounce can pumpkin puree 

1/2 large or 1 small yellow onion, diced 

1 clove garlic, diced 

1 tablespoon extra-virgin olive oil 

1 13.5 ounce can coconut milk (can substitute with 1 can vegetable or chicken broth)

1/2 cup filtered water 

1/4 cup unsweetened almond milk or other unsweetened nut milk (or 1/4 cup broth)

1/2 teaspoon cinnamon, 1/2 teaspoon nutmeg, and 1/2 teaspoon of ginger 

1/4 cup of cashews or coconut milk 

1/2 teaspoon vanilla 


Directions: 

1. Sauté onion and garlic in olive oil over medium heat until translucent, about 4-5 minutes 

2. Add spices, stirring for 1-2 minutes until it smells delicious 

3. Add pumpkin, water, coconut milk (or broth), almond milk and vanilla 

4. Bring your pot to a simmer for 15-20 minutes and remove from heat

5. After soup has cooled a bit, pour it into your blender, add cashews (or coconut milk) and blend.  Season with salt to taste and enjoy!
