Shrimp and Vegetable Skillet

Ingredients:
2 lbs. large raw shrimp
3 tablespoons lime juice
1 teaspoon salt
2 tablespoons fresh ground black pepper
1 tablespoon chili seasoning
1 teaspoon paprika
1/2 tablespoon cumin
2 fresh garlic cloves minced
2 tablespoons extra virgin olive oil (use avocado oil if using heat higher than 350)
Veggies:
1 small purple onion, diced
1 large zucchini halved and sliced
1 large yellow squash halved and sliced
1 red bell pepper cubed
1 tablespoon extra virgin olive oil (use avocado oil if using heat higher than 350)
Instructions:
1. Marinate the shrimp with the spices, lime juice and olive oil or avocado oil.
2. Meanwhile, chop and slice the veggies.
3. Add one tablespoon of olive oil or avocado oil in a skillet and bring to medium heat. Saute the veggies until the obtain a gold color and are tender. Remove and set aside in a bowl.
4. In the same skillet, saute the shrimp until they are fully cooked. Then return the cooked veggies to to the skillet and saute with the shrimp for 1-2 minutes.
5. Remove and serve.
