Ingredients:
1 avocado
2 eggs
salt, pepper (to taste)
chives or any fresh herbs (optional)
Preparation:
Slice the avocado in half and remove the pit. Place in a small baking dish. Crack an egg into each avocado half. Bake at 425 degrees for 15-20 minutes. Remove and add salt, pepper, chives, if desired.
