Spicy and Savory Mexican Breakfast Bowl

Mexican Breakfast Bowl

Ingredients: 

1-2 eggs 

1-2 cups spinach (or mixed greens or arulula)

1/4 cup cherry tomatoes diced 

2 Tbsp fresh salsa 

1/2 avocado diced 

1/4 cup black beans 

3 cups cooked tri color or regular quinoa 

sliced olives

hot sauce to serve 


Preparation: 

1. Cook egg to your liking: sunny side up, over easy, or scrambled. 

2. While egg cook, simply place remainder of ingredients into a bowl. 

3. Top bowl with egg and devour.
