Mediterranean Quinoa Bowl


Prep Notes

Mediterranean Quinoa Bowl 

Serves: 4-6 

Ingredients: 

3 cups cooked quinoa 

2 medium cucumbers, chopped 

1 pint cherry tomatoes, halved 

1-3 chopped red, yellow or orange bell peppers 

1/2 red onion, finely chopped 

1/2 avocado, chopped 

2 -3 cups fresh arugula or other greens you like (or more!)

3 tablespoons extra virgin olive oil 

2 tablespoons raw apple cider vinegar

1 teaspoon minced garlic 

pinch of sea salt 

Other delicious add ins:  black beans, olives, garbanzo beans, pumpkin seeds, chopped raw nuts, fresh minced ginger, chia, flax or hemp seeds, fresh parsley or cilantro, or a squeeze of fresh lemon or lime juice 


Directions: 

1. Cook the quinoa per directions. In a large bowl combine the cooked quinoa, arugula, cucumber, tomatoes, onion, avocado & any other veggies, olives, seeds, beans you enjoy

2. Mix together the olive oil, apple cider vinegar & the minced garlic with the sea salt  

3. Pour the olive oil/vinegar mixture over the salad mixture and toss. Top with parsley or cilantro if you wish. Serve.
