Loaded Veggie Romaine Wraps

Ingredients:
3 large romaine lettuce leaves
1/2 cup chopped cauliflower
1/2 cup sliced mushrooms
1/8 cup chopped onions
1/8 cup chopped bell peppers
1/8 cup chopped celery
1 cup chopped kale
1/2 avocado sliced
1 teaspoon extra virgin olive oil
pinch of sea salt
Process:
1. Saute onions first in a medium sized pan for 2 minutes until they start to brown. Then add the cauliflower, mushrooms, peppers, celery and kale in olive oil. Cook for additional few minutes until done to your liking.
2. Place cooked ingredients in romaine lettuce leaves (cups)
3. Add the sliced avocado on top of veggies
4. Add sea salt to taste
These are delicious! If you want even more flavor, throw in some minced garlic or ginger root or both! You can also throw in some chopped raw almonds for some protein and crunch or drizzle a bit of coconut aminos if you like that flavor. You could throw in some chopped cooked chicken too!
