Hummus and Veggie Collard Wraps

Hummus and Veggie Collard Wraps 

Recipe Credit: In the Kitchen: Vegetarian Collard Wraps - Frank Lipman MD (drfranklipman.com)

Serves: 2 

Ingredients: 

4 large cleaned and dried collard green leaves (can also use large romaine lettuce leaves and eat like a taco :)

4 tablespoons hummus 

1/2 avocado sliced length wise

8 pieces of cucumber sliced very thinly 

2 radishes sliced very thinly 

1/4 red onion sliced very thinly 

1 cup grated carrots 

1/2 cup sprouts or micro greens 


Directions: 

1. Carefully trim the hard stem of the collard leaves (this will make it easier to roll.  See link in recipe for instructions if you need them)

2. Lay the leaves on a cutting board 

3. Spoon 1 tablespoon of hummus onto each leaf 

4. Layer with the rest of the ingredients, distributing evenly among the 4 leaves

5. Fold the top and  bottom of the leaf inwards then tightly roll into a wrap
