Healthy One-Pot Tomato Soup

Healthy One-Pot Tomato Soup 

Makes: 4 servings

Ingredients: 

1 Tbsp. extra virgin olive oil 

1 medium onion, chopped 

1 stalk celery, chopped 

2 cloves garlic, minced 

1 tsp. chopped fresh thyme or parsley 

1 (28 oz.) can whole peeled tomatoes, with juice 

1 (14 oz.) can whole peeled tomatoes, with juice 

4 cups vegetable broth 

1/2 tsp. salt 

1 Tbsp. grass fed butter or ghee, melted 

freshly ground pepper, to taste 

*Optional nutrition powerhouses to add in to up your veggie & vitamin intake: carrots, red, orange and yellow bell peppers, spinach or kale, fresh ginger, turmeric, basil & any of your favorite veggies. If boiling carrots, they will take a few more minutes to soften.


Directions: 

1. Saute garlic and onions in the bottom of a soup pot on medium heat 

2. Add in all ingredients and bring to a boil. Lower heat and simmer for 15 minutes

3. Use a hand held immersion blender to blend everything together in the pot until soup reaches your desired consistency
