Breakfast Egg Muffins
Ingredients:
12 eggs
1 orange or yellow bell pepper, chopped
1 red bell pepper, chopped
1 1/2 cups baby spinach, chopped
1/4 cup red or yellow onion, chopped
1/4 tsp each of sea salt and black pepper (or a bit of cayenne pepper or paprika for a kick)
2 tablespoons fresh or dried herbs like oregano, basil, parsley
optional: 1/4 cup goat cheese, feta cheese or shredded mozzarella
Preparation:
1. Preheat oven to 350 degrees.
2. Chop the veggies finely
3. Mix the eggs and add the salt and pepper and herbs. Mix again.
4. Place liners in a muffin tin and spray with avocado or coconut oil spray
5. Put a bit of spinach in each muffin cup and then add a bit of the bell peppers/onions until all muffin cups are filled
6. Pour the egg mixture over the spinach/peppers in their muffin cups
7. Optional: add a bit of cheese on top
8. Bake at 350 for 24-28 minutes and enjoy right away. If you enjoy salsa, these are great with salsa! Can also store in fridge or freezer for later.
