Dark Chocolate Blueberry Clusters
Ingredients:
1 cup dark chocolate chips or broken up dark chocolate bars (70% or greater cacao recommended)
1 tablespoon coconut oil
2 cups fresh blueberries
1/4 teaspoon fine sea salt
Directions:
1. Line a sheet pan with parchment paper
2. Melt the chocolate and coconut oil on the stove on low heat, stirring until completely smooth and creamy.
3. Fold in the blueberries
4. While the chocolate is still moldable, use a spoon to pile the blueberries in bite-sized clusters on the sheet pan. With a spatula, scrape any remaining chocolate over the berry clusters, making sure they're evenly coated. Sprinkle with sea salt and transfer to the refrigerator.
5. Let chill for at least 20 minutes, until firmly set. Store in the fridge until you're ready to eat them.
