Crunchy Cabbage Salad with Almonds
Servings: 4-6
Ingredients:
4 cups chopped cabbage (white, green or red, whichever you enjoy :)
1/2 cup chopped cucumber
1/2 cup chopped red bell pepper
1/2 cup chopped almonds (or any other raw nuts you enjoy)
1/3 cup raw almond butter (or any other raw nut butter)
1 cup cooked chopped chicken or tofu (optional)
1 tsp. minced garlic
1 tsp. minced fresh ginger root
1/4 tsp. red pepper flakes
3 T. extra virgin olive oil
3 T. raw apple cider vinegar
1 T. coconut aminos (optional)
pinch of sea salt and pepper
Directions:
1. Wash and chop the cabbage, cucumber and bell pepper. Toss them together in a large bowl. Add chopped chicken if you wish.
2. Dressing: In a small bowl, mix together chopped almonds, almond butter, garlic, ginger, raw almond butter, red pepper flakes, apple cider vinegar, coconut aminos and salt and pepper.
3. Pour the mixed dressing over the vegetables and toss together. Enjoy!
