Cilantro Rice Salad

Serves: 4
Ingredients:
1 tablespoon unrefined coconut oil or butter
2 garlic cloves, minced
1/2 onion, diced
1 cup quinoa or brown basmati rice
2 cups chicken or vegetable stock or low sodium broth
1/2 cup chopped cilantro, more as desired
1 lime, zested and juiced
sea salt and pepper, to taste
Directions:
1. Heat the oil in a pot over medium heat. Add the onion and garlic and cook 2-3 minutes. Add the dry rice and cook an additional minute, stirring so the rice doesn't burn
2. Add the stock, cover and turn the heat to a low simmer. Cook until the liquid has evaporated and rice is cooked through, about 25-30 minutes
3. Turn off the heat and stir in the cilantro, lime zest and juice. Season with salt and pepper. Serve warm. Enjoy!
This makes a yummy rice or quinoa! You can also vary it and make a batch of quinoa in a rice cooker or stovetop with water or veggie broth and just chop up some cilantro and squeeze a lime into it after it's done. ~Mandy
