Slow Cooker Buffalo Chicken Lettuce Wraps

Slow Cooker Buffalo Chicken Lettuce Wraps 


Ingredients: 


For the Chicken: 

3-4 boneless skinless chicken breasts 

1 celery stalk, diced 

1 clove garlic, minced 

16 oz. low sodium chicken broth 

1/2 cup hot sauce, like Frank's 


For the Wraps: 

6 large lettuce or cabbage leaves like Romaine or red or green cabbage 

1 1/2 cups shredded carrots 

2 large celery stalks, sliced into matchsticks or diced 


Directions: 

1. In a slow cooker, combine chicken, onions, celery stalk, garlic and broth (enough to cover your chicken. You can add a bit of water if the broth doesn't quite cover it)

2. Cover and cook on high for 4 hours 

3. Remove the chicken from the slow cooker, reserve 1/2 cup of the broth and discard the rest (or save for a different recipe)

4. Shred the chicken with two forks, return the chicken to the slow cooker with the 1/2 cup of broth and add the hot sauce. Set on high for an additional 30 minutes

5. To prepare lettuce cups, place 1/2 cup buffalo chicken in in each leaf and top with 1/4 cup shredded carrots & celery. Wrap up and enjoy!
