Berry Delicious Scones

Ingredients:
2 cups almond flour
1/2 cup millet flour (can substitute with oat or almond flour)
2 tablespoons coconut sugar or granulated monk fruit sweetener (optional)
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon sea salt
2 tablespoons unrefined coconut oil, melted but not hot
2 large eggs
1 1/2 teaspoons vanilla extract
3/4 cup mixed berries (blueberries, raspberries, blackberries)
Directions:
1. Preheat the oven to 375 and line a baking sheet with parchment paper.
2. In a medium bowl, combine the almond flour, millet flour, coconut sugar, baking powder, cinnamon and salt
3. In another medium bowl, combine the coconut oil, eggs, and vanilla. Stir well. Add the dry mixture to the wet mixture and stir until fully blended.
4. Gently fold the berries into the dough.
5. Flatten the dough into an inch thick circle. Cut the circle in half and then slice each half into 3 wedges. Optional to sprinkle with a bit of coconut sugar or monk fruit sweetener.
6. Place the scones on the lined baking sheet and bake for 18-20 minutes, until golden brown.
7. Let cool before serving. Store leftover scones in an airtight container in the fridge for up to 2 days.
